Alma marked the return of Henrique Sá Pessoa, one of the most cherished Portuguese chefs, to haute cuisine. A winning bet, too, as the restaurant just received a Michelin star in its opening year even though, as the chef said, "we broke some basic rules of hospitality manuals. The tables, for example, don't have towels." The setup is modern and minimal, without inhibiting labels that divert the attention of the gustatory experience.
